Method
- Preheat oven to 350°.
- Beat the margarine/butter and sugars in a large bowl until thoroughly mixed and fluffy.
- Add the eggs. Mix well.
- Add the vanilla. Mix well.
- Combine the flour, baking soda, baking powder, hot chocolate mix in a separate bowl.
- As it is mixing on low, gradually add the flour combination. Mix until well blended.
- Crush the peppermint and mix it into the dough.
- Stir in the filled peppermint baking truffles or your flavored chocolate chips
- Drop onto cookie sheets and bake from 8-11 minutes depending on your oven until edges are slightly browned.
- Let sit on the trays for ONLY 2-3 minutes once removed from the oven. **
Notes
*In order to flavor regular chocolate chips to become peppermint flavored, put your chocolate chips into a sealed bag and then add several drops of peppermint flavoring. Gently move the chips around to become coated by the peppermint flavoring. Let them sit for awhile to absorb flavoring.
**Do not let the cookies sit on the tray for longer than 2-3 minutes. This will prevent the crushed peppermint from hardening onto the tray and making the cookies stick and break apart when you try to remove them.
