Peppermint Hot Chocolate Cookies

These delicious cookies taste like a mug of peppermint hot chocolate. The blending of the hot chocolate, peppermint and chocolate chips makes this a divine treat!

Ingredients
  

  • 1-1/4 cup margarine or butter, softened
  • 1 cup sugar
  • 2/3 cup brown sugar, packed
  • 2 eggs
  • 1 tsp vanilla extract
  • 3-1/4 cup flour
  • 1/2 cup hot chocolate mix with marshmallows
  • 1-1/4 tsp baking soda
  • 1 tsp baking powder
  • 1- 9 oz filled peppermint baking truffles or 11.5 oz chocolate chips with peppermint flavor added to them *see notes for details
  • 1 cup crushed peppermint

Instructions
 

  • Preheat oven to 350°.
  • Beat the margarine/butter and sugars in a large bowl until thoroughly mixed and fluffy.
  • Add the eggs. Mix well.
  • Add the vanilla. Mix well.
  • Combine the flour, baking soda, baking powder, hot chocolate mix in a separate bowl.
  • As it is mixing on low, gradually add the flour combination. Mix until well blended.
  • Crush the peppermint and mix it into the dough.
  • Stir in the filled peppermint baking truffles or your flavored chocolate chips
  • Drop onto cookie sheets and bake from 8-11 minutes depending on your oven until edges are slightly browned.
  • Let sit on the trays for ONLY 2-3 minutes once removed from the oven. **

Notes

*In order to flavor regular chocolate chips to become peppermint flavored, put your chocolate chips into a sealed bag and then add several drops of peppermint flavoring.  Gently move the chips around to become coated by the peppermint flavoring.  Let them sit for awhile to absorb flavoring.
**Do not let the cookies sit on the tray for longer than 2-3 minutes.  This will prevent the crushed peppermint from hardening onto the tray and making the cookies stick and break apart when you try to remove them.
