Peppermint Hot Chocolate Cookies

On a cold winter day, who doesn’t relish the thought of a warm cup of hot chocolate topped off with a peppermint stick. Well, if you indulge in this latest creation, you will be transported to that place. You will be rewarded with this splendid cookie treat which is super easy to make.

Just a couple of hints:

I used Nestle’s filled Peppermint baking truffles. These are fantastic and if you can get them by all means use them. If you can’t, you can take regular chocolate chips and place them in a sealed plastic bag and add several drops of peppermint extract. Lightly mix them so that the flavoring coats all the chips. Let them sit for a bit so the extract can absorb into the chocolate chip. I have used this technique in the past and it works out well too. I crushed candy canes in order to get my crushed peppermint, but you can often purchase crushed peppermint or just simply take peppermint candy and crush them. Anyone of these options is a great way to get the desired amount of crushed peppermint.

Another tip to make these the best cookies possible is to make sure when measuring out the hot chocolate mix with marshmallows to scoop a generous amount of the dried marshmallows in the mix in your measuring cup (I even added extra marshmallows from the mix so there was a generous amount on the top of the half cup :).

Don’t forget this hint:

When they come out of the oven, you will want to leave them on the pan for 2-3 minutes after baking. However, you don’t want to leave them on the tray much longer than that because they could become tight to the tray because of the melted peppermint that might be on the tray under or on the edge of the cookie. If you wait to long, it will be hard to remove the cookies from the tray and you risk breaking your beautiful creations.

Peppermint Hot Chocolate Cookies

These delicious cookies taste like a mug of peppermint hot chocolate. The blending of the hot chocolate, peppermint and chocolate chips makes this a divine treat!

Ingredients
  

  • 1-1/4 cup margarine or butter, softened
  • 1 cup sugar
  • 2/3 cup brown sugar, packed
  • 2 eggs
  • 1 tsp vanilla extract
  • 3-1/4 cup flour
  • 1/2 cup hot chocolate mix with marshmallows
  • 1-1/4 tsp baking soda
  • 1 tsp baking powder
  • 1- 9 oz filled peppermint baking truffles or 11.5 oz chocolate chips with peppermint flavor added to them *see notes for details
  • 1 cup crushed peppermint

Instructions
 

  • Preheat oven to 350Ā°.
  • Beat the margarine/butter and sugars in a large bowl until thoroughly mixed and fluffy.
  • Add the eggs. Mix well.
  • Add the vanilla. Mix well.
  • Combine the flour, baking soda, baking powder, hot chocolate mix in a separate bowl.
  • As it is mixing on low, gradually add the flour combination. Mix until well blended.
  • Crush the peppermint and mix it into the dough.
  • Stir in the filled peppermint baking truffles or your flavored chocolate chips
  • Drop onto cookie sheets and bake from 8-11 minutes depending on your oven until edges are slightly browned.
  • Let sit on the trays for ONLY 2-3 minutes once removed from the oven. **

Notes

*In order to flavor regular chocolate chips to become peppermint flavored, put your chocolate chips into a sealed bag and then add several drops of peppermint flavoring.Ā  Gently move the chips around to become coated by the peppermint flavoring.Ā  Let them sit for awhile to absorb flavoring.
**Do not let the cookies sit on the tray for longer than 2-3 minutes.Ā  This will prevent the crushed peppermint from hardening onto the tray and making the cookies stick and break apart when you try to remove them.
